- Supplier price changesKings Cross · last 14 days
- Wastage and labourKings Cross · last week
It's Kings Cross. Gross profit fell from 71.8% to 68.2% last week, a drop of 3.6 points. Every other site stayed within half a point of the week before.
What took the 3.6 points
Points of gross profit lost at Kings Cross, last week
- Supplier prices. Marsh & Sons, the site's butcher, put beef mince up from £6.80 to £8.10 a kilo on Tuesday. It's in four of the ten best-selling dishes.
- Wastage. £610 was logged against a usual £190, most of it prep for a function cancelled on Saturday.
- Sales mix. More set-menu covers than usual, which run at a lower margin.
Worth doing this week
- Switch beef mince to Northfield Meats, the group supplier, at £7.20 a kilo.
- Ask the team to record function prep separately, so it isn't counted as waste.

Three things for Monday
- Kings Cross is 6% behind target and labour ran at 31.2%. The weekday rota is worth a look.
- Leeds Central's stock count is overdue, so its gross profit is an estimate until it's done.
- Shoreditch had its best week since August, 8% ahead of target, led by weekend brunch.

Your data, your access. Your choice of AI.
Same access as your login
The AI Connector signs in as you, so it only sees the sites and data your SUMS account can. A site manager sees their site; head office sees the estate.
You choose the AI provider
Conversations are handled by the AI tool you connect, under its terms. On business plans, ChatGPT and Claude don't use your conversations to train their models by default; on personal plans, check your privacy settings.
Mostly reading, by design
Today the AI Connector is mainly for exploring your data. A small number of actions, such as setting sales targets, can be done from a conversation, and we're adding more.
Disconnect any time
Remove the connector in your AI tool's settings and it no longer has access to SUMS.
FAQ
Questions about the AI Connector.
Which AI tools work with the AI Connector?
ChatGPT and Claude, which our own team uses every day. Other AI assistants that support MCP connectors can connect too; tell us which you use and we'll help.
Is it included in our package?
Yes. Every SUMS package includes the AI Connector. What it can see depends on each user's access in SUMS.
Can the AI change our data?
Mostly it reads and explores. A small number of actions, such as setting sales targets, can be done from a conversation. We're extending this carefully.
Can team members see figures they shouldn't?
No. The AI Connector uses each person's own SUMS login, so it has exactly the same access they do.
Can we schedule reports, like a Monday morning summary?
Yes, if your AI tool supports scheduled tasks. Several of our clients do this, and we can help you set it up.
Is our data used to train AI models?
That's set by the AI provider you connect. On business plans, ChatGPT and Claude don't use your conversations for training by default. On personal plans, check your privacy settings.
